Ingredients
- 1.75 oz Gin
- 1 oz Lavender Simple Syrup
- 1 oz Fresh Lime Juice
- Egg White
Instructions
- Prepare lavender simple syrup in advance: combine equal parts sugar and water with 2 tablespoons dried culinary lavender, heat to dissolve, steep, then strain and cool.
- Add gin, lavender simple syrup, fresh lime juice, and egg white (optional) to a cocktail shaker.
- Perform a dry shake (no ice) vigorously for 15-30 seconds to emulsify the egg white.
- Add ice and shake hard until well-chilled.
- Double strain into a chilled coupe or Nick & Nora glass.
